Haluski (hah-loosh-kee)
Haluski, a beloved traditional dish hailing from Poland and Slovakia, combines humble ingredients to create a symphony of tastes and textures. Tender cabbage sautéed to caramelized perfection, mingling with buttery noodles, seasoned with a hint of aromatic spices—this dish is a testament to the beauty of simplicity in cooking. We started making this dish when we started getting a weekly bag of produce from Everoak Farm through Everoak’s CSA (community supported agriculture) program. There’s not a lot to chop and it comes together so quickly. Enjoy!
Ingredients
1 medium yellow onion, julienned
1 Cabbage, julienned
1/2 Smoked polish kielbasa, sliced into half moons or coins
1/2 bag Medium egg noodles
Salt
Freshly ground black pepper
1 tbsp butter (optional)
2 tbsp chicken stock (optional)
Directions
Prepare onion, cabbage, and kielbasa.
Bring salted water to boil for the egg noodles.
Sauté kielbasa in a Dutch oven or large pot over medium heat, stirring occasionally until lightly browned evenly on all sides, remove and set aside.
Add onion into warm pot and sauté until lightly caramelized. Meanwhile, cook the egg noodles according to the package instructions. Drain them well once cooked.
When there is about 2 minutes left on the egg noodles, add cabbage into the onions along with chicken stock and butter if using, stirring, scraping up any remaining fond.
Add browned kielbasa back, stir for 1 minute, add your drained egg noodles, along with salt and pepper stirring to combine.
Adjust seasoning to taste.
